Amaranth Coconut Pudding

Nutrition :

Ingredients :
Amaranth leaves, Coconut milk & shredded Coconut, Jaggery, Vanilla extract, Cinnamon stick, Fresh peeled ginger, Raisin

Instructions :
  1. Heat 3 katoris coconut milk at low flame in a large saucepan until slightly thick
  2. Add 1 katori amaranth leaves (cholayi), 1 katori shredded coconut, jaggery & salt as per taste, 1 cinnamon stick, 1 tsp vanilla essence, 1 inch of ginger, 1/4th katori raisins (optional) to the coconut milk, and then pour into an oiled casserole/ baking dish.
  3. Bake at 350 degrees F for 60 minutes, until amaranth is tender.
  4. Serve hot or cold. Top with cream if desired
Makes 1 full baked dish
