Sabudana Khidchi

Nutrition :
Kids like this dish due to its soft texture. High carbohydrates makes it suitable for growing children. Adults should consume in moderation

Ingredients :
Sabudana, Ghee, Cumin seeds (jeera), Potato, Peanuts, Green chillies (optional), Curry leaves, Salt as per taste, Sugar, Lemon
and Coriander (dhania)

Instructions :
  1. Rinse 1 cup sabudana under water until water turns clear. This is important to get rid of all the extra starch
  2. Transfer the rinsed sabudana to a large bowl and add one 1 cup water to it.  Soak it overnight
  3. In the morning the sabudana would have soaked up all the water, remove if any excess water is present
  4. Press a sabudana pearl with two fingers to check if the sabudana is ready to cook. It should smash easily. Set it aside
  5. Heat 1 tsp ghee in a pan on medium heat. Once the oil is hot, add 1/2 tsp cumin seeds and let them sizzle for a few seconds
  6. Then add the diced potatoes (1 medium potato) and cook for 3-4 minutes. Stir continuously until the potatoes are cooked. Remember to chop the potatoes small so that they cook easily and quickly
  7. Add 2 tsp raw peanuts and cook for another 3-4 minutes
  8. Add 6-7 curry leaves and green chillies (as per taste) and stir for another 2 more minutes
  9. Add the drained sabudana to the pan along with salt and 1/2 tsp sugar. Stir until it mixes well
  10. Cook for a few minutes until most of the sabudana becomes translucent. Stir it continuously. Do not cook for long else it will become sticky
  11. Remove pan from heat. Add juice of 1/2 a lemon and some chopped coriander and mix it well
