Quinoa Coconut Rice
Quinoa enhances the fibre, protein, B vitamins, calcium, iron, magnesium & zinc while coconut adds essential omega fatty acids to the dish
Quinoa, Coconut oil, Coconut milk, Spices, Cashew nuts
Heat 3 tsp of coconut oil in a pan and add 1 katori soaked quinoa, 1 katori coconut milk, 1 katori water, salt as per taste and bring to a boil
Heat 6 tsp of coconut oil in another pan and add mustard seeds, cumin seeds, ginger, asafoetida, green chillies, curry leaves, cashew nuts as per taste and saute.
Add this tempering to the boiling quinoa and mix.
Cook till quinoa fluffs up
Garnish with coriander leaves & serve
