Quinoa Coconut Rice

Nutrition :
Quinoa enhances the fibre, protein, B vitamins, calcium, iron, magnesium & zinc while coconut adds essential omega fatty acids to the dish

Ingredients :
Quinoa, Coconut oil, Coconut milk, Spices, Cashew nuts

Instructions :
  1. Heat 3 tsp of coconut oil in a pan and add 1 katori soaked quinoa, 1 katori coconut milk, 1 katori water, salt as per taste and bring to a boil
  2. Heat 6 tsp of coconut oil in another pan and add mustard seeds, cumin seeds, ginger, asafoetida, green chillies, curry leaves, cashew nuts as per taste and saute.
  3. Add this tempering to the boiling quinoa and mix.
  4. Cook till quinoa fluffs up
  5. Garnish with coriander leaves & serve
