Nutrition :
Popular Maharashtrian prasad made on Janamashtami. Probiotic, high in fibre, protein, calcium and protective antioxidants. Soothing for the stomach and gives high energy. Good to eat for the whole family as breakfast/snack

Ingredients :
Parched rice, curd, cucumber, coconut, ginger, salt, coriander (dhania) leaves, ghee, mustard (sarson) seeds, cumin (jeera) seeds, green chillies (optional)

Instructions :
  1. Soak 1 katori chudaa in water for about 1-2 minutes (to soften it, and if the chudaa is of a thicker variety then it would take about 5 minutes to soften)
  2. Once chudda softens, drain all the water and keep it aside in the strainer for 1 minute until all the water is drained off
  3. For the seasoning (chaunk), heat 1 tsp ghee in a pan on medium heat, add ½ tsp mustard seeds and allow it to crackle
  4. Add ½ tsp cumin seeds, 1-2 chopped green chillies (optional), 1-inch grated ginger and fry for a minute and turn off the heat
  5. Add the seasoning to the chudaa, along with 1/4th katori curd, 1 finely chopped cucumber, 1/2 katori of grated coconut and salt to taste
  6. Stir to combine the Dahi kala very gently. Check the salt and adjust to suit your taste. Finally, stir in the chopped coriander leaves and serve
